I’m usually stuck on what to make for dinner after a long day at work. I find weeknights to be the most difficult to prep for. I leave early in the morning and I get home ready to scarf down whatever food happens to be readily available. Weeknight dinners don’t have to be so difficult.
Sure, I should probably make freezer meals and meal prep, but that just isn’t my “thing” right now. Maybe when I get back to making baby food in a few months, I’ll have the mindset to take on meal preps.

This recipe is very easy. Pop all the ingredients into a pan and let them cook while you shower yourself and the kids.
I’m not one for mushrooms, but my husband is. I would make the spinach and eggs then saute the mushrooms separately for him to add to his meal.
I was unable to get an immediate picture of this from Jar of Lemons, but I’ve personally tried this. And it is AMAZING!!! It’s super easy and a quick win in my house.
