20 Vegetarian Meals for Meatless Mondays

Meatless Mondays don't have to be such a headache. You can make any of these 20 vegetarian meals in less than an hour and they each taste delicious.

Vegetarian meals have become a staple item in my house. Since my husband became a vegetarian, I’ve been tasked with trying to find meals for “Meatless Mondays” and many other days of the work. But I understand that this might not be your situation.

I’ve personally tried each of these recipes and I would recommend them for every working mama who is looking for something easy to make.

Veggies Only!

Cauliflower is a great substitute for chicken. It doesn’t taste like chicken, (though my husband will tell you otherwise) but it still tastes pretty good.

Honey Garlic Baked Cauliflower

I made this for my mother-in-law when she came over for dinner once and she really enjoyed them. You can eat them by themselves or with whatever side dish you might like.

 

Zucchini Meatballs

These zucchini meatballs were quick and easy to make. They are also so delicious over veggie spaghetti.

 

General Tso’s Cauliflower

These zucchini boats are very good. You can also fill them like stuffed peppers. Both are equally delicious!

I like to trick my toddler into eating more vegetables than just broccoli. Anyone else’s toddler absolutely love broccoli? I tell my son that this is spaghetti and it gets the job done. And it’s very tasty.

Mmmmmm. These are a huge necessity because everyone should know how to make enchiladas. They are very easy and simple to make but always taste delicious.

 

Black Bean and Sweet Potato Tacos

These tacos are very good. You get the sweet of the sweet potatoes and the savory of the cilantro. Yummy! I’ve tried a few recipes from Gluten Free with LB and her recipes are super easy to make and are always great!

 

Veggie and Rice Burritos

You can never go wrong with a yummy burrito. Just be sure that you get the extra big burrito tortillas. They make it so much easier to keep your burrito together.

One Pot Creamy Garlic Pasta (Vegan)

This pasta is vegan but I used cow’s milk for the recipe and it still tasted delicious. Plus, I’m not completely ready to make vegan meals if I can have milk products. If you are looking for great vegan recipes for yourself or loved ones, Yup, It’s Vegan is a great website to check out.

These caprese calzones are a huge win in my house! They only take about 25 minutes to prep and cook and they taste amazing. If you are looking for something quick and easy to eat for a weeknight dinner on the run.

I actually just made this for dinner. It is so good and even as someone who loves a good hearty chili, this one is a big win for me. We just moved from New Jersey to North Carolina and I needed to make something that was easy and I wouldn’t have to buy a bunch of food for.
